Taste

Does it taste of seaweed?
No. Seaweed is where the savouriness comes from, not a flavour you notice — in the same way Marmite doesn't taste of yeast. NOYSTER has the most of the sea about it, which is the point of an oyster sauce.

What's the difference between the three?
NOYA is used like soy sauce — savoury, lightly sweet, the everyday one. NISH is used like fish sauce — sharper, saltier, brighter. NOYSTER is used like oyster sauce — thicker, sweeter, the most assertive of the three.

Is it spicy?
No. None of the three contain chilli or heat of any kind.

Does NISH smell like fish sauce?
No. Traditional fish sauce gets its pungency from a year of fermenting anchovies. NISH has a clean sea aroma instead. If you use fish sauce for salt and savoury depth, NISH does that job; if you love it specifically for the funk, NISH reads as different.

Allergens and Diet

What allergens are in it?
None. All three are free from all 14 major allergens — no soya, gluten, wheat, fish, shellfish, milk, egg, nuts, celery, mustard, sesame, sulphites, lupin or molluscs.

Is it safe for coeliacs?
Yes. No gluten-containing ingredients, unlike most soy sauces, which are brewed with wheat.

Is it suitable for a shellfish allergy?
Yes, including NOYSTER — there are no oysters or molluscs of any kind in it.

Is it vegan?
Yes, all three, and certified organic.

Can children eat it?
It's a salty seasoning rather than a food, so the usual advice about salt in children's diets applies. Used by the teaspoon in cooking it's no different from any other condiment.

Ingredients and Nutrition

What's in it?
Water, coconut nectar, vinegar, sea salt, yeast extract and seaweed, with tapioca starch in NOYSTER for body. Full lists are on our ingredients page and on each product page.

Is it high in salt?
It's a salt-based seasoning, so yes by weight — but you use it by the teaspoon, not the glass. A teaspoon of NISH contains 0.94g salt; a teaspoon of NOYSTER, 0.38g. Full nutritional information is on each product page.

Is there added sugar?
No refined sugar. The sweetness comes from organic coconut nectar, which is a natural sugar. NOYSTER is the sweetest of the three.

Does it contain MSG?
No. The savouriness comes from the seaweed and yeast extract, not added monosodium glutamate.

Is it organic?
Yes, all three are certified organic in the UK.

Using and Storing

Can I substitute it one-for-one?
Yes. Use the same quantity your recipe calls for, then taste and adjust.

Can I cook with it, or is it a finishing sauce?
Both. NOYA and NISH work during cooking and at the end. NOYSTER is at its best added late or drizzled over a finished dish.

Does it need refrigerating?
Not until opened — store unopened bottles somewhere cool. Once opened, keep it in the fridge.

How long does it keep?
Six months in the fridge once opened.

How far does a bottle go?
250ml, and you use it by the teaspoon — a bottle lasts most people a few months of regular cooking.

Why is it more expensive than soy sauce?
Wild seaweed is hand-harvested off the north coast of Scotland, and the sauces are certified organic and brewed in small batches in Britain. It's priced as a premium condiment rather than a commodity one.

So-zhay. The diaeresis marks the final "e" as sounded rather than silent.
